Middle school is not too early to begin with color theory. I provide cyan, magenta and yellow along with black and white. In the 6th grade the first thing we do is a "challenge" to create as many different color, tints and shades as possible. Any shape or arrangement they want and they love it.
Other than that, some high interest subjects/content are presented for practice and some are open for student choice.
