I have tried many ways over the years and the most successful for me
is to use a tray and put water in about 4 inches deep. sprinkle the
powder in with a spice shaker with the large holes in the lid. I got a
stainless steel one with a plastic lid in a gourmet shop so I keep it
filled with powder all the time. I shake in a light layer on the
surface of the water and leave it to absorb. I keep sprinkling every
15 minutes or so and then let set for several hours - sometimes over
night. I never stir. I don't get lumps this way. Heaven help if I
have to hurry to make paste. If I have to hurry I sprinkle less but
more often and make less thick. If I get the dreaded lumps because I
rushed then nothing to do but to put some brave hands to work
squishing out the lumps.
