What level?

For elementary, I use sketchbooks. We usually do pre and post work in our
sketchbooks for each project. I will have them do lead in writing or
drawing to get them thinking, and then they will "journal" after using
questions I pose. For the really young ones (who I don't have to assign
grades to, thankfully) I do group assessment. We go around the room,
sometimes in small groups, and review the process of the artwork step by
step. We also review the purpose and/or style, related master artist, and
sometimes the Elements. I write the students' answers on the overhead
while we discuss and then I print them up and hang the students' remarks
with the display of their artwork. ("We learned....")
