I understand what you mean about the "roadblock". Challenges need to sometimes be met and conquered in little steps. Start this year by changing what they think an art class should be by adding journaling to their art class routine. It doesn't have to be everyday, but get them use to the idea that learning about art is more than making projects. Challenge them by asking them questions which will make them
think about their views of art. I think the key word here for might be routine. Once they know this is a regular part of your class, the acceptance ( of examining values and beliefs) will start to grow.
