Art & Ecology is both a set of resources for teachers and an on-line
exhibition of contemporary ecological art.

The site also has an extensive reading list in the index section:
Readings for Teachers.

The section "Ecological Perspectives and Issues" list many artists
dealing with the issues you outlined. Ukeles, Denes, Simpson,
Harrisons, etc.
