Tim,
When I teach perspective with my 7th graders I first give them the
perspective test which I got from the book Drawing with Children (I'm
pretty sure that is the book, I don't have it home with me now!) Anyway,
the test was given to several different age groups of children across
the country and the results are posted in the book. The questions
basically goes like this:
"Pretend you are standing at the end of a room and at the other end is a
square table with four people sitting around it. Draw the room and the
table as you would see it from your end of the room."
This gives me a good basis to see what they have already learned and
what I need to focus on. There are usually only 2 or 3 who get it
completely right. After teaching them how to draw the room correctly I
have them draw another room this time using more creativity. We brain
storm on various types of room they could draw and embellish. They must
have some type of square object in the middle of the room and at least 2
people. They draw pool tables, bedrooms, living rooms, game rooms,
dining rooms, etc.

As a final project I give them a large piece of paper and teach them how
to draw a long hallway in 1 point perspective. (I actually got this
idea from either School Arts or Arts and Activities, several years ago.)
Then I have them draw a long hall of their choice. Again we brainstorm
as a class first. The big one of course is always the hotel hall but I
try to steer them away from that. I've had the 13th floor from the
Twilight Zone, prison with electric chair at the end of the hall,
inside of a bus, inside of a theatre, inside of a conestoga wagon,
tunnel, sewer, hallway of the Titanic with water bursting through the
door at the end of the hall, school hallway, etc. They really get into
it and it's something they can all do even if they are not very
artistic. When they are finished I hang them up fairly high down the
hallway of the school. Since they are pretty big, they go on and on down
the hall. Everyone comments on them and the students are very proud of
their work. Hope this helps!
