How about doing collage self portraits. I have the kids look at work by Dali, Chirico and other surrealists...then they create their own collage self portraits beginning with a school photo of themselves. They can use construction paper for favorite colors. Pictures from stock photo books and magazines are good for adding their favorite foods, sports, hobbies etc.

I usually have the kids make a list of favorite color, favorite animal, favorite foods, favorite things to do, favorite subject in school, hobbies, something other people might be suprised to learn about them, etc. I have found that this eliminates insecurities about drawing realistic self portraits. Some students created their portrait a la Archimbolo using food (spaghetti for hair), favorite sport (Football for eyes), etc.
