I am not a professional of this field but with all the talk of Dewey
I thought I might interject a book which helped me a lot. It is
called
"Young Children in Action"*,by: Mary Hohmann,Bernard Banet & David
P.
Weikart ISBN0-931114-05-5
This is not an art book. It is the educational approach to the
cognitively oriented preschool curriculum.
However my favorite art book for kids is-"Doing Art Together"*
Which is out of print.

Anyone else like to recommend books (esp.) first hand knowledge of
curriculum you've tried.
I do like some of the nature craft books,as well as a few
multi-cultural books and "Art From many Hands".
Victor D'Amico- "Creative Teaching in Art",
"Assemblage,A New Dimention in
Creative Teaching in Action"
Mr D'Amico, one of the great pioneers in creative art education
This book is out of print.
Lois Lord," Collage and Construction in Elementary and Junior High
Schools"- great photos and examples.
There are more but let's here from some other people
