Jimmye Livingston asked about independent study:

I teach an advanced 2-d and 3-d class whcih has replaced all our level 3
classes ("painting 2", for example).

I often take kids into other scheduled classes to serve them as independent
study kids, but run the course like my advanced 2-d class. I'd like to
know what your advanced class is like before I can respond intellegently,
BUT, what I do even in my advanced class (which can be taken over again or
concurrently, for more credit) is to do exaclty what you suggested: come up
with a set of objectives with the student, set weekly or bi-weekly meetings
for critiques and questions. It works well for the self-motivated kid, but
it doesn't help my enrollments in my regularly sceduled advanced class
