alternative assignment, help!!

I assigned my 8th graders to enter the local big art expo. Of
course, some did not, and I want to give them an alternative rigorous
assignment. I had thought of making them enter something else, but
the next show is the fair this summer and that would probably just
inconvenience the parents.....
