The Story About Ping was by Marjorie Flack and Kurt Wiese.
Rosie's Walk was by Pat Hutchins
Wombat Stew was by Marcia Vaughan
The Art Lesson was by Tomie de Paola
Check out Frida by Jonah Winter & Ana Juan
and books illustrated by Margaret Early, such as Robin Hood, William Tell and Ali Baba and the Forty Thieves

Some good Australian books are :

The Bunyip of Berkeley's Creek by Jenny Wagner & Ron Brooks
John Brown, Rose and the Midnight Cat by Jenny Wagner & Ron Brooks
anything by Patricia Mullins but especially Dinosaur Encore (children love the dinosaurs and the torn paper work is something very special)
The Pocket Dogs by Margaret Wild & Stephen Michael King (a friend did a very nice lesson creating textile dogs inserted into ceramic pockets)
Fox by Margaret Wild & Ron Brooks (very painterly, lovely use of colours, incredibly moving story)
Diary of a Wombat by Jackie French & Bruce Whatley (everyone laughs when they read this, no matter how many times, lots of opportunities for art responses)
anything, absolutely ANYTHING by Shaun Tan - all Australian book illustrators and art teachers bow before this extremely talented young man who pushes the boundaries of what a great children's picture book can be - if you can choose only one, choose The Red Tree.
