There aren't alot .... and I haven't seen any instructional tapes on clay.
We're doing clay right now with a video camera plugged directly into a Mac
running Adobe Premiere and SoundEdit.
Ken Southworth, a retired animator who worked for all the studios, produced a
tape on traditional animation last year. You can check it out at:

Also check out Animation World Network. Not much on education but alot of
diverse resources on the medium.
