I've never heard of the yolk drying method - I've always used the
blowing method, it's not that hard.
After I finish an egg, but before I varnish it, I poke a hole in
each end CAREFULLY with a needle. (I chip away just a little bit more in the
bottom end.) Then, I insert a needle long enough to penetrate the yolk, and
move it around to "scramble the insides" - again CAREFULLY. Then blow
through the top and the egg should drain out the bottom.
