There is an excellent book about the design process that includes
activities, projects and resources for students ages 12 and up (though I
believe you could also creatively editor expand the ideas to suit
younger students or adults, as well).

It deals primarily with architecture and urban planning, a bit less with
product and 2 dimensional design. The analysis of all the components of
the design process: aesthetics, environmental affects, systems analyses,
teamwork, etc. are very thorough and stimulating and thoughtful. The
thinking processes encouraged in the text could be applied to any design
project.
