Portfoilio Assesment in elementary art

I teach elementary art 1st through 5th grades in two schools; 24
classes about 400 students, one school I have a small room the other
school I am on a cart. I am considering keeping portfolios for each
student. I would like some advice on keeping portfolios for 1st through
5th grades.

How do you do this without going crazy?
Should I just do it with the older grades 4th or 5th?
How do you keep them without becoming a frazzled paper filer?
Do the kids do their own filing of art work?
Do you keep portfolios if your on a cart?
Do the kids fill out rubrics on their projects?
Is it helpful to have portfolios to grade from?

Anyone who has any advice from their own experience or an opinion of why
or why not to do this, please respond.
