How about the first thing you teach them is how to make rubber stamps (just use the thin foam sheets, cut out letters, glue backwards onto cardboard) and they stamp their first names on a big t-shirt (or smock) that they have to wear when they work with you. So at least when you look up at the kid, they have their name stamped across their chest! (you can make this stamping project about something else, i.e. color harmonies).
