You will find numerous links for celebrity caricature.

Just train kids to document their sources of photographs just like
they document sources in writing assignments.

Just out of curiosity, I looked up celebrity portraits:

You will find lots....and lots.... and lots.... of people selling
celebrity portraits.
Some celebrities are more diligent about protecting their image than others.

A practicing artist just needs to know the risk if he/she wants to
market prints of the work. Yes - MANY are getting away with
it....Celebrities just choose their battles, too.
