I also try to weave with all grades. In addition to your list I also do straw
weaving (drinking straws used as a loom & yarn) with grades 3 or 4. I tried
it with 2nd grade this year and was sorry I did. I usually stick to paper
weaving in 1st & 2nd grades and move to yarn in 3rd. I have contemplated
doing coil weaving (maybe with 5th or 6th) - you can make baskets or placemats
using some sort of core fiber (rope or thick yarn) and a yarn needle, but
haven't tried it with a big group. I'm not an expert at either method but
know the basics well enough to expose the kids to the process. I can share
more about how to if you're interested. (It would be easier to explain in
person.)
