With highschool students I have had good success with writing
projects which draw on aesthetics and criticism (great as writing
smaples for the portfolio). I try to make them fun by putting the
students in a "job".

For example, they could be art critics for a local paper and critique
the show or a work of art. They could be the curator for a Museum
and have to choose one work from the collection for purchase by their
Museum - then write a report on why they chose that work for the
acquisitions committee. I have also had students be writers who need
cover art for a book jacket. They have to title the book and then
write a short essay for inside the book jacket on why they chose the
cover art. (Books can be fiction or non-fiction).
