I collected dozens when I was teaching HS and kept them in a WordPerfect file. Buried
somewhere in the Getty archives is a collection, most likely put together by Judy Decker.
There are also quotes scattered throughout IAD, but I haven't taken the time to see if they're
compiled on one page. Here are a few I especially like and have used:

Longfellow: Art is long and time is fleeting.
Reynolds: A room hung with pictures is a room hung with thoughts.
St. Francis: He who works with his hands is a laborer. He who works with his hands and his
head is a craftsman. He who works with his hands, his head, and his heart is an artist.
Hockney: The smallest event can become a story if you tell it in the right way.
Degas: Art is not what you see but what you make others see.
Klee: Art does not reproduce what we see. It makes us see.
??: Sight is a faculty. Seeing is an art.
??: Ive never seen a museum that preserves the Dow Jones averages of past civilizations.
Richard Gurin, President of Binney & Smith: Students who experience the arts learn to find
creative solutions to problems, to value team work, and to develop communication skills.
These are all vital to success in life and in the workplace.

A couple of non-art ones:
Things turn out the best for those who make the best of the way things turned out.
If you find a path with no obstacles, it probably doesnt lead anywhere.
