These are a few things that I have found helpful. Make a card or sheet
up that is always in your lesson plans titled "Art Room Routines" which
tells how you start conduct, and end a class. For example, 5 minutes
before the class is to end, tell students to stop working and put things
away, etc....
( mine has a neon colored attachment that says ALWAYS COUNT SCISSORS AT
THE END OF CLASS... they inevitably disappear when a sub is in)

Another thing that helps me, is to have a simple activity that takes
only one period or an activity that I already started, and the kids have
a good grasp of what is expected.
